Segovian Suckling Pig
Sourced from the province of Segovia, these suckling pigs come from one of around forty authorised farms operating under strict certification standards. Known as cochinillo, they are slaughtered at no more than three weeks old and fed exclusively on maternal milk, giving meat that is pale, fine-textured and naturally tender with a light layer of fat. Traditionally roasted whole, producing delicate meat with crisp skin.
