We source Grade A foie gras from Hungary and Bulgaria, two well established regions for foie gras production. The livers are large and well formed, allowing for clean portioning across pâtés, parfaits and pan-frying. It delivers a rich, balanced flavour with a silky texture, suited to a range of classic dishes.
