Known as Kurobuta in Japan, this pork is recognised for its high intramuscular fat and fine muscle structure, producing meat that is darker, tender and well marbled. Suckling Pig
Known in Spain as Cochinillo, the pigs are slaughtered at no more than three weeks old and fed exclusively on maternal milk, giving meat that is pale, fine-textured and naturally tender with a light layer of fat. Traditionally roasted whole, producing delicate meat with crisp skin.
